You can press R1 during the following cutscenes to access the secret first-person POV: 

Level	When To Press R1	What Do You See
Krasnogojore Mountaintop	After the scene with The Boss and Volgin at Groznyj Grad, The Boss will ride away on her horse. Press R1 after she says, “I’m going to get the Davy Crocket!!”	This will give you a unique view of The Boss. Once she rides away, you’ll also see Eva make a finger-pointing gesture.
Groznyj Grad (Torture Scene)	After being humbled by The Boss, Ocelot will bolt out of the interrogation room.	You’ll see The Boss perform the same gesture Ocelot uses throughout the game.
Shagohod Boss Fight	After defeating Volgin in the second encounter, press R1 when Snake says, “It’s finally over…”	You’ll see a vision of The Sorrow lurking behind Eva.
The Boss Fight	After you beat The Boss and kill her, her horse will arrive to mourn her. Press R1 when the horse cries.	You’ll see the spirits of The Sorrow and The Boss, now reunited in death.
Ending (President’s Office)	Press R1 when the President offers to shake Snake’s hand.	You’ll see Ocelot taunting you from the window at the back.
Ending (Graveyard)	Press R1 when Snake sheds a tear for The Boss at her grave.	You’ll get a first-person POV of Snake, now blurry due to his tears.
