Before you can set up a bonfire, you must first complete a quest called The Great Escape. You will naturally unlock this feature as you follow the main story of Tainted Grail The Fall of Avalon, and you may view it as part of the tutorial. In the quest, you will meet a red knight named Caradoc and learn that you were used as a test subject by the Red Priests. After a lengthy conversation, Caradoc will kill you and be by your side when you regain consciousness.
