The Ammo capacity remains as one of the core stats in Doom The Dark Ages, along with Health and Armor. You can increase these stats as you progress through the chapters. While increasing Health and Armor directly boosts your endurance, the Ammo capacity enhances your firepower.

How To Increase Maximum Ammo in DOOM The Dark Ages
Similar to Health and Armor, you can increase the maximum ammo capacity by defeating Leaders and gathering their Demonic Essence. Since the Demonic Essence is categorized into three types, you should be aware of what type you are after. If you aiming to increase the ammo, you should prioritize Demonic Leaders with yellow bullet icons above their head.
This indicates that the specific Leader will drop Demonic Essence – Ammo upon defeating, which permanently upgrades one of the four ammo types of the game. Each ammo type receives three upgrades, and you can collect up to 12 Ammo Demonic Essence throughout the game.

Here are the locations of all 12 Leaders that drop Ammo Demonic Essence in Doom The Dark Ages:
