Looking at the manufacturing node, the 8500G uses a much more advanced node, which is why it can sustain higher clock speeds at the same TDP level. But when we take a look at the core architecture. The 8500G features a hybrid design, comprising 2 Zen 4 performance cores and 4 Zen 4c cores.
This results in a massive performance loss, as there are only 2 performance cores, and the rest are stripped down. On the other hand, the 5700G has 8 performance cores; despite being older, in terms of cores with greater potency, the 5700G has an edge. In terms of PCIe lanes, although the 8500G is Gen 4.0, the count is still lower than the 5700G. That said, the GPU within the 8500G is much superior to the one found under the 5700G.

The Radeon 740M within the 8500G is much superior to the Vega 7 within the 5700G. RDNA 3-based 740M is much more efficient, hits a higher clock, and supports a lot of new rendering instructions compared to the Vega 7 iGPU.
If you are looking for the best i-GPU performance within the two, the 8500G is the most sensible choice. However, if you are looking to pair it with a discreet GPU, either option would work, but it’s not recommended to take this route. The reason is that the 5700X (AM4) and 7600X (AM5) significantly outperform these two when you account for the discrete GPU pairing option.
