In case you are stuck at a lower-than-required level, two or three side missions will usually get you back on your required level again.

However, the choice between Canon mode or Immersive mode will likely cause a fluctuation of approximately 3-4 hours. AC Shadows is not a game that you should speedrun, and there is not a very big scope for it either.
