When it comes to Archetypes, there are four major classes that you can choose from. However, as mentioned before, you are not locked to any certain class. You can mix and match different attributes to build your unique class. However, knowing the main archetypes can help you a lot during the early game.
As of now, there are four major Archetypes and their playstyles (bonus stats) in Tainted Grail The Fall of Avalon, those being:

Each choice gives you different bonuses that appear on the left side of the screen as you hover over each archetype and subclass. However, the initial class does not matter much, as later in the game, you can allocate stats in whichever attribute you want.
Classless in Tainted Grail: The Fall of Avalon
During the questioning, if you choose to remain silent for both questions, you become Classless. Classless means you do not get any bonus attributes. Moreover, all your attributes and stats start at a base level of 10. This allows you to build your character from the ground up, and however you want.
