In Starfield, you can target specific systems on Starships, disable them, and board them. This is perfect for the Bounty Hunter, who must capture targets in space and even commandeer their ships! The Bounty Hunter Background gets Targeting Control Systems, allowing you to focus on specific aspects to disable. The Grav drive is typically the most important, so a ship cannot travel away.
